This year, particularly, I’ve been meditating on the fact that gardens and poems share critical, linked invitations. And because even as the planet warms, gardens and poems help cool us off, practically and emotionally. I don’t think I’m overstating the case to say that time spent with poems and gardens build pathways that actually repair us. In their own small plots, poems build diverse networks as well: Sinking into the rhythms and pleasures of literature stimulates the parts of our brains attuned to empathy, helping us build attention, kindness, compassion, regard. Gardens and poems invite that kind of dwelling.

NEW YORK (AP) — David Bouley, the award-winning and frenetic chef whose idiosyncratic haute cuisine and crusty breads pleased critics and the public during a career chasing sleek deliciousness, has died. Bouley died of a heart attack Monday at his home in Kent, Connecticut, according to Lisa Queen, his literary agent. Other restaurants he worked in include Danube, Bouley Bakery, Upstairs at Bouley, Bouley at Home, Secession and Brushstroke, a collaborative effort with the Tsuji Culinary Institute in Osaka, Japan. Danube and Bouley Bakery each earned two Michelin stars. The restaurant Bouley — which famously had a foyer filled with apples — closed in 2017 after 30 years and several location changes, earning a three-star from the New York Times the year previously.

At least, that’s what Andrés says in his docuseries “José Andrés & Family in Spain,” streaming on Discovery+ and now airing on CNN. Each episode focuses on a different territory, and as his daughters eat and learn about Spanish food, the audience eats (with their eyes) and learns, too. A rice dish made in a paella pan with pork belly — notably not true Valencian paella, according to José Andrés. Turn Your Pasta Primavera Into a Lasagna

In the United States, lasagna almost universally entails tomato sauce, mozzarella and ricotta. However, a recent visit to Italy reminded me that the lasagna family is, in fact, vast and varied. There are hard-boiled egg and meatball-stuffed lasagnas from Naples; chicken liver studded ones from Le Marche; Bolognese and béchamel-swathed examples from Emilia-Romagna. But there was one version that made me run to pull out my lasagna pan as soon as I got home: white lasagna. Made with a béchamel sauce and often meatless, white lasagnas are plush, creamy showcases for seasonal vegetables — artichokes in spring, zucchini in summer, mushrooms in the fall, radicchio in winter — layered between thin sheets of pasta, then baked until golden.
But one common cause is related to what we eat, particularly foods that are poorly absorbed by the gut. Carbonation can cause bloating, so opt for flat water or vegetable juices. Black beans, navy beans, kidney beans, pinto beans and soy beans are most likely to give you gas. Stevia and monk fruit extract are healthier and less likely to cause gas or bloating. GrainsFoods that contain gluten can cause bloating in people who are intolerant.
Deep-Fried Artichokes and Other Healthy Foods

The best thing I’ve eaten so far in 2023 was a deep-fried globe artichoke. If you’ve never had one, a deep-fried artichoke is a glorious thing. If all vegetables tasted like this, few children would need to be coaxed to eat their greens. This artichoke made me think—and not for the first time—that our whole idea of healthy eating needs redefining. By February most people who started a New Year’s diet will have already abandoned it, and no wonder.

A Love Letter to Canned Food

Like many ingredient-obsessed cooks, I hit the farmers’ market once or twice a week. I eat my brussels sprouts and squash in October, my asparagus and rhubarb in June, and not a whole lot beyond potatoes and onions in February. Yet when I start dreaming about the most delicious dishes I’ve ever eaten, Mrs. Ruby’s molten, cheesy artichoke dip, made with canned artichokes and topped with a spiky crown of French’s fried onions, is one of the first things that springs to mind. Mrs. Ruby was a family friend when I was growing up, and while she admitted she wasn’t a great cook, she could wield a can opener like a Jedi master. She served the dip over a can of Sterno, and by the end of the night the bottom was crusted and browned, like the prized tahdig on a pot of Persian rice.
